I have had to stop it or hold it for a few days for surgeries. I had no apparent issues for missing it for 4 or 5 days but long term stopping it would increase your risk of a flare.

I wouldn't recommend it, but the main factor will be what your current dose is. Obviously going Cold Turkey from a high dose is completely different to going Cold Turkey from a low dose.
I have always aimed to wean off Azathioprine, but have never done cold turkey, seems way too risky for relapsing.
